A Week At A Time – Meal Ideas!

Mother’s Day is next Sunday and I hope all of you do something special for mom.  The gesture never needs to be fancy, just thoughtful, and cooking or baking something special for her is always a nice idea.

This week is loaded with recipes you can make for mom.  On Monday, Crispy Basil Salmon is a great way to start the week and something that me and my mom both adore.  Tuesday is usually taco night and these Instant Pot Spicy Cumin Black Beans go so well with tacos.  Wednesday is a good evening for salad, but not just any salad, and this Slow Roasted Tomato & Beet Salad is above and beyond delightful.  Thursday’s are a nice night to make my Creamy Corn, Salami & Serrano Flatbread.  It’s a favorite of my mom and you can always use store-bought dough.  Friday should be a chill-night and a good cocktail like this Watermelon Campari Spritzer is one special drink.  My mom loves Campari and it’s super refreshing to sip on after a long week.  Saturday’s are for baking and my mom loves chocolate, so this Chocolate Butter Cake is rich and creamy and she’ll just love it.  Don’t forget to celebrate mom!
