Chocolate Peanut Butter Brownie Bites – Recipe!

Brownies are a favorite baked dessert with a mixture of unsweetened & sweetened chocolate and rich cocoa powder — that’s what gives them their super rich taste.  Some prefer brownies plain or with nuts, but I tend to think they are over the top delish with a spoon of peanut butter on the top.

Brownie Bites are a fun decadent treat, because you get one intense bite – maybe two, to get a supreme fudgy mouthful.   Sometimes mini desserts leave you unsatisfied because you are still craving a little more – not with these Chocolate Peanut Butter Brownies Bites – I promise.  Most people love Reese’s Peanut Butter Cups, well these may win that war on peanut butter chocolate – bake some and see for yourself!

These brownie bites make an easy preparation for a party or gathering and if you want to make them larger, you can prepare them in a regular muffin pan, just increase the baking time.  Also, they wrap and store beautifully in the refrigerator for several days, or freeze for a month or so.  Just think…. a little chocolate peanut butter heaven ready at all times.

Ingredients

Peanut Butter Filling

1 cup creamy peanut butter

1/3 cup light brown sugar

Brownies

2 ounces unsweetened chocolate

2 ounces semi-sweet chocolate

1 1/2 sticks butter

3 eggs

1 3/4 cups granulated sugar

1 tablespoon vanilla extract

1 cup all purpose flour

2 tablespoon cocoa powder, I use Valrhona

1 teaspoon salt

1/2 cup peanut butter chips

1/2 cup semi sweet mini chips

(Makes 50 Brownie Bites)

To Prepare:

1. Preheat the oven to 350 degrees.  Grease a mini muffin pan with cooking spray or butter.  In a small bowl, combine the peanut butter and brown sugar, set aside.  In a microwave safe bowl, add the unsweetened and semi-sweet chocolate and butter, microwave on high for 1 minute.  Remove and stir, microwave again for 45 seconds, remove and stir.  Let cool.

2.  In a large mixing bowl, add the eggs and granulated sugar, stir for 2 minutes until combined.  Add in the vanilla extract and stir again for 1 minute.  Pour in the cooled chocolate and stir until combined.

3.  Add in the flour, cocoa powder and salt – stir until combined, about 1 minute.  Pour in the peanut butter and mini chips and stir.  Spoon or scoop the brownie mixture into the mini muffin pan, until 2/3 full.  Spoon a 1/2 teaspoon of peanut butter on top.

4.  Bake for 12 minutes or until a toothpick comes mostly clean.  Remove from the oven and let cool completely in the pan, about 30 minutes.  Remove and serve, or wrap and store until later.  Enjoy!
