A Week At A Time – Meal Ideas

Happy rainy Sunday….yes, we are actually getting heavy rain here in Southern California for the next week and I couldn’t be happier. There are so many cozy recipes to create when the weather is cloudy and wet, so let’s make it soup and stew week to celebrate.

On Monday, a big bowl of Creamy Mushroom and White Bean Soup sounds amazing with a piece of crusty bread for dipping. It’s a vegetarian wonder that really satisfies and becomes naturally creamy because of the white beans that puree into one silky bowl. Tuesday is usually taco night, but a Smoky Pork Pozole sure sounds good. The flavors are as Mexican as they come, and the broth is bubbly with chunks of porky deliciousness. Dip some toasted tortillas in the soup for an enhanced experience.

Slow Cooker Corn Chowder with Bacon is on the menu for Wednesday and it sure tastes delightful, even when you are preparing it with frozen corn because fresh is out of season. The creaminess coats your tongue beautiful and let’s not forget about the bacon. Thursday comes quickly and a bowl of Double Pumpkin Coconut Curry Soup will get you to Friday. The autumnal flavors with a hint of Indian spice is what makes this soup extra special.

TGIF begs for Chicken Meatball Orzo Stew. This big pot of yum is somewhere between a soup and a stew, and the meatballs are some of my favorite things to enjoy. It’s a quick fix meal for the end of a busy week with flavors the entire family will love. Saturday’s are for baking a big loaf of Rosemary Bread. It’s great for sandwiches or to use for dipping into any soup or stew recipe, so you may want to prepare this today to have on hand all week long. Stay dry and yay to the rain.
