Best Muffins Recipes for Mom on Mother’s Day!

Mother’s Day is tomorrow and it’s time to pull out all the stops for mom.  Muffins are an easy and delightful treat to celebrate the occasion and they’re such a good idea to either make ahead and bake-off, just before mom comes over, or make and take to her to share at her house.  These little treats are easy to throw together using ingredients in your refrigerator; like fresh or frozen fruit, nuts and seeds, or shredded vegetables; like zucchini or carrots.  Most muffin batters are the same, except when going gluten-free, which changes the type of flour used.  So, instead of using all-purpose, whole wheat, or other whole-grain flour in the muffin batter, go with an almond flour or pre-mixed gluten-free blend.

I just love a good muffin with coffee or tea and I think mom will feel the same, especially when you surprise her with a freshly baked batch.  If you want to really step-up your game, whip up some eggs, or create a layered yogurt & fruit parfait to go along with the muffins, and you have yourself a beautiful meal to celebrate mom.  Happy Mother’s Day!
