In-N-Out Burger is a legend in the Southwestern parts of the United States and even if you haven’t eaten at one, you have probably heard about their freshly made burgers.  In-N-Out Burger is the epitome of Southern California – light, clean and satisfying.  Their burger menu is relatively small, offering a hamburger, cheeseburger and the double-double – which is two burger patties and two slices of cheese.  During the month of January we are trying to eat a little healthier to balance out the heavy eating of the holidays, so creating a Double-Double Turkey Burger “Protein Style” would be a fresh alternative to a traditional burger, without sacrificing flavor and enjoyment.
Using Jenny-O Extra Lean Ground Turkey is the perfect protein in this recipe because it is low in fat and calories, so we can indulge in two patties, instead of just one. Â Also, the flavors of the poultry are moist and light and don’t feel as heavy as a beef burger. Â This double-double is similar to the In-N-Out Burger, except I made the patties 4 ounces, instead of 3 ounces and I used cheddar cheese, instead of American cheese. Â Wrapping the whole turkey burger in iceberg lettuce, adds a nice crunch and makes it slightly sloppy fun to eat.
Ingredients
1 pound Jennie-O extra lean Ground Turkey
1/2 white onion, sliced
4 slices cheddar cheese
1/3 cup light mayonnaise
1 tablespoon ketchup
1 teaspoon sweet pickle relish
dill pickle chips
1/2 head iceberg lettuce
olive oil
salt
pepper
(Makes 2 Turkey Double-Doubles)
1. Â Remove the ingredients from any packaging and wash and dry lettuce and slice the onion. Â In a saute pan over medium heat, add 1 teaspoon olive oil and the onion. Â Saute for 8 minutes, stirring occasionally, until lightly brown and caramelized. Â Spoon into a bowl and set aside.
2. Â Form the ground turkey into 4 patties and place on a plate drizzled with olive oil. Â Sprinkle the top of each patty with salt and pepper. Â In a large iron skillet, add 1 tablespoon olive oil and place over medium heat. Â Add the turkey patties to the pan and cook for 3 minutes.
3. Â Flip the turkey patties over and place a slice of cheese on top of each patty. Â Continue to cook for 4 minutes or until the cheese has melted over the top of each burger.
4. Â While the cheese is melting over the burgers, in a small bowl combine the mayonnaise, ketchup, relish and a pinch of salt. Â Stir until smooth.
5. Â Arrange three pieces of lettuce on both plates. Â Top with a turkey burger patty and dollop with sauce, a few pickles and caramelized onions.
6. Â Place another turkey patty on top and dollop with sauce, pickles and caramelized onions. Â Place three lettuce leaves on top of each double-double and serve. Â Enjoy!
