Tomato, Burrata & Spinach Salad – Recipe!

I love tomato season and every year I can’t wait to make my favorite salads with these lusciously sweet fruits.  Yes, tomatoes are fruits, technically, and Caprese Salad, tomato and mozzarella, is probably the most common salad of the summer.

I enjoy the combination of sweetness from the vine ripe tomatoes with a creamier cheese like burrata;  instead of just plain mozzarella.  The center of burrata is loose and delicately melts over the fresh tomatoes like a volcano starting to erupt.

Spinach is another great addition with tomato and burrata because it can handle the weight of freshly sliced tomatoes and cheese.  Also, it offers a slight pungent bite that complements the other ingredients, just a nice addition.  Most of the time, the simplest things always taste the best and this is no exception.

Ingredients

2 organic fresh tomatoes

1 ball burrata, about 4 ounces

4 cups fresh spinach leaves, washed and dried

1/4 red onion, finely diced

3 tablespoons parmesan cheese, grated

1/4 cup balsamic vinegar

1 teaspoon Dijon mustard

3 tablespoons olive oil

salt

pepper

(Serves 2-4)

To Prepare:

1.  Wash spinach and layer leaves on bottom of a serving dish.  Slice fresh tomatoes and layer on top of  spinach.  Dice cheese into large chunks, about 4 or 5 and place on top of tomatoes.  Sprinkle onions and parmesan over tomatoes and burrata.

2. In a small bowl, add balsamic, Dijon mustard, and a pinch of salt and pepper, whisk to combine.  Drizzle in olive oil and whisk until slightly thickened.  Spoon dressing over salad.  Enjoy!
